Mashed potatoes my way

Quick and easy recipe
Do you like mashed potatoes? I know I do. Today I prepared a really easy recipe which is pretty quick to make too! I just thought I'd share it with you since Thanksgiving is coming up this week.
Ingredients:
8 medium sized baking potatoes (or any other potatoes)
large microwavable bowl or large boiling pot
chilli or cayenne pepper powder
Wash the potatoes. In the large microwavable bowl, place the potatoes and cover with enough water so that water is above the potatoes. Put in microwave and boil for about 40 minutes (yes, 40 minutes). Once boiled, you can choose to peel them or keep the skin on. I usually leave the skin on for fiber. Then, start mashing with a fork while the potatoes are still hot. It helps for easier mashing. Once the potatoes have been about 3/4 mashed, add milk or heavy cream until the potatoes have the consistency of mush. Then add about a tablespoon of each spice or to your taste. Keep mashing. Let cool and then serve.
Serves about 6-7 people.
In your large boiling pot, boil the potatoes. Then transfer to large bowl and follow the above procedure.
I have frozen some of the potatoes because it is just my husband and I this Thanksgiving. So we will have more than plenty. You are welcome to come join us for dinner!

Sounds good, I'll be having them tomorrow. My favorite uses half an half and garlic. I use garlic in almost everything. The ginger I tend to use with pork for some reason (along with the cayenne). Now I'm hungry, see what you've done? :-P Have a great Thanksgiving! Peace!! Tom
